Baked Jalapeno Poppers

The NBA Playoffs started this weekend which is a HUGE deal in this household.  I was blessed enough to watch games all day both Saturday and Sunday!  (Please note that was entirely sarcastic!)  Luckily I do enjoy basketball, although I was getting a little sick of it after watching 8 games in a 2 day period.  On Saturday I decided to make some Baked Jalapeno Poppers both to honor the Miami Heat and to escape the TV for a little bit!  Get it?  Jalapenos for the Heat!

Baked Jalapeno Poppers
Adapted from A Cozy Kitchen
Ingredients:
-9 large Jalapenos
-8 ounce cream cheese, softened
-2 cups grated shredded mild cheddar and monterey jack cheese (or any shredded cheese you like!)
-1 garlic clove, minced
-1 teaspoon chili powder
-1 teaspoon hot sauce (such as Frank’s Hot Sauce or Tabasco)

-Slice the jalapenos in half and cut out the seeds.  The amount of seeds you leave in the jalapenos determines how hot the poppers are, so leave in as many or as few as you want.  We left in a TON because the mister likes things hot!

-Preheat the oven to 350 degrees.  In a bowl, mix together the cream cheese, 1 ½ cups of the shredded cheese, garlic, chili power and hot sauce.

-Spoon the mixture into the jalapeno halves and arrange on a baking sheet.  Sprinkle the poppers with the remaining shredded cheese.

-Bake for about 20 minutes, or until the cheese is bubbly.
